This matters because the quality of a tea is inseparable from where it was grown, when it was picked, and how it was processed.
Like vintage in wine — climate, yield, and processing conditions vary annually and directly affect the cup.
Terroir in tea is real. Meijiawu Longjing and Shifeng Longjing are the same variety from the same city — and they taste different.
